AFAIK, there is no editor that does good code assist on YUI 3, although we have some ideas in that regard. (YUI 3 presents some hard problems for code assist.)

YUI 2 gives you some options, one of which is the popular TextMate Bundle for YUI 2 by Flickr engineering manager Ross Harmes:

Aptana has YUI 2-based code assist and YUI's Thomas Sha created some Dreamweaver snippets for CS4.

What does the team use? It ranges from WordPad to TextMate to Eclipse to (most popular) Vim. Most YUI team members use MacBook pros of various vintages running Vim and using some virtualization software to test on Windows.
